Six Steps for Fryer Grease Safety

To ensure the safety of your employees and everyone in and around your establishment, we recommend incorporating these steps into your oil management plan, as outlined by the United States Department of Agriculture Food Safety and Inspection Service:

  1. Gather the necessary tools, including a gas mask, rubber gloves, coveralls and a collection container.
  2. Turn off the fryer, unplug it and allow the oil to cool completely.
  3. Gently detach the lid from the fryer to avoid any spills or damage.
  4. Pour the grease into a metal container or sturdy plastic container with a strong seal – do not pour it down the drain.
  5. Scrape the sides of the container and remove any remaining solid food waste from the used oil.
